Cuvee is the creation of Gilbert Henry, chef
and owner of the Portland institution, Winterborne Restaurant. Chef Henry, a native
of Alsace, France, searched for a location for his new establishment that reminded
him of home. Carlton, in the heart of Oregon Wine Country, met all his requirements.
Hand crafted Country French cuisine, extensive local wine list, full bar, and
sophisticated dining room. Come join us at Cuvee, it's classy, it's comfortable,

Cuvee
serves local products prepared in the traditional Country French style. Signature
dishes include Cassoulet, Bouillabaisse, Escargot, Coquille St. Jacques and weekly fish specials. The
menu leans toward seafood, but hearty meat dishes such as Bifteck avec Pommes Frites
and Lamb Chops can be found on the seasonally changing menu. Chef Henry creates
Cuvee's tantalizing desserts ranging from mouth watering Creme Caramel to the
house favorite, Chocolate Lombard ("Death by Chocolate").
